If you are making still wine (non-sparkling) you do not want CO2 to be in solution when you bottle. Some home wine makers have a piece of plastic rod that is bent at one end and the other end they put in a drill. This then put into the wine and turned on and the CO2 will come out of solution. I’ve found an easier way. We have a Food Saver system and it included an adapter for mason jars. I just put this on the top of the carboy and turn on the Food Saver and the vacuum it creates de-gasses the wine very easily, and you don’t have to stick anything into your wine.
